Sorrel Cream Sauce for Fish

RECIPE INGREDIENTS
1/3 cup sour cream
1/3 cup mayonnaise or salad dressing
1 teaspoon finely shredded lemon peel
1 teaspoon dried thyme, crushed
1/2 teaspoon prepared mustard
1/4 cup whipping cream
1/4 cup coarsely chopped fresh sorrel or spinach

RECIPE INSTRUCTIONS

In a small sauce pan combine sour cream, mayonnaise or salad dressing, lemon peel, thyme, and mustard.
Cook and stir over low heat until hot (DO NOT BOIL).
Remove from heat.
In a medium mixing bowl beat whipping cream with an electric mixer on low speed until soft peaks form.
Fold whipping cream and sorrel or spinach into sour cream mixture.
Serve immediately with fish.
Makes 1 ¼ cups.
