Valdez Halibut

INGREDIENTS

  • 1 teaspoon minced onion
  • 1 garlic clove, minced
  • 1/2 cup olive oil, divided
  • 2 cups tomato sauce
  • 2 peppercorns, ground
  • 2 whole cloves
  • 1/8 teaspoon ground cinnamon
  • 2 tablespoons chili powder
  • 1/2 teaspoon sugar
  • 10 green olives, sliced
  • 8 halibut steaks
  • 3 potatoes, boiled and diced
  • 4 slices bread, sauteed and cut in strips

INSTRUCTIONS

  • Saute onion and garlic in 1/2 the oil. Add tomato sauce and spices, and cook for 20 minutes.
  • Add sugar and olives. Saute the steaks in the rest of the oil until halibut flakes.
  • When halibut is done, add to the sauce with the potatoes. Garnish with bread sticks.
  • Serves 8.
