Valdez Halibut
INGREDIENTS
- 1 teaspoon minced onion
- 1 garlic clove, minced
- 1/2 cup olive oil, divided
- 2 cups tomato sauce
- 2 peppercorns, ground
- 2 whole cloves
- 1/8 teaspoon ground cinnamon
- 2 tablespoons chili powder
- 1/2 teaspoon sugar
- 10 green olives, sliced
- 8 halibut steaks
- 3 potatoes, boiled and diced
- 4 slices bread, sauteed and cut in strips
INSTRUCTIONS
- Saute onion and garlic in 1/2 the oil. Add tomato sauce and spices, and cook for 20 minutes.
- Add sugar and olives. Saute the steaks in the rest of the oil until halibut flakes.
- When halibut is done, add to the sauce with the potatoes. Garnish with bread sticks.
- Serves 8.
