Halibut Caddy Ganty Recipe

This is an old Alaskan staple of the southeast. Allegedly named after a lady named “Caddy Ganty” back in the 1920s. According to legend, she was a fisherman’s wife from Southeast Alaska who was frustrated with how halibut lost moisture when cooked, and came up with this recipe.

This Halibut Caddy Ganty recipe is similar to the Halibut Olympia, but differences between both of them exist. This dish is quite a saucy way to prepare a caught halibut, filled with flavor and goes well with rice!

Ingredients

  • 3 pounds Halibut, cut into serving size pieces
  • Dry White Wine
  • Fine, dry bread crumbs
  • Paprika to taste
  • 2 cups Sour Cream
  • 1/2 cup Mayonnaise
  • 1 Onion, chopped fine

Instructions

  1. Place halibut pieces into a bowl.
  2. Cover the halibut with dry white wine.
  3. Place waxed paper over the bowl and refrigerate for 2 hours.
  4. When halibut is marinated, drain fillets and pat them as dry as possible between 2 towels.
  5. Roll the fillets in bread crumbs and place in a single layer in a banking dish.
  6. Mix together sour cream, mayonnaise, and onion.
  7. Spread this sauce over the halibut, smoothing it out to the edges of the pan.
  8. Sprinkle with paprika and bake at 500 degrees for 15-20 minutes, or until light brown and bubbly.
  9. Serve at once.
