Grilled Halibut with Mango Relish
MANGO RELISH INGREDIENTS
- 1 mango, peeled, seeded and diced
- 1/4 cup seeded and chopped cucumber
- 2 tablespoons chopped red onion
- 1/4 cup chopped fresh cilantro
- 1 jalapeno, seeded and minced
- 1 clove garlic, minced or pressed
- 1 teaspoon grated lime peel
- 2 tablespoon olive oil
- 1 tablespoon honey
MANGO RELISH INGREDIENTS
- 2 tablespoons tamari or soy sauce
- 1 tablespoon dry sherry
- 1 tablespoon olive oil
- 1 teaspoon grated lime peel
- 1 tablespoon fresh lime juice
- 1/4 teaspoon cinnamon
- 1 clove garlic, minced or pressed
- 2 1/2 pounds halibut fillets, 1 inch thick
MANGO RELISH INSTRUCTIONS
- Combine mango, cucumber, red onion, cilantro, jalapeno, and garlic. Whisk together lime peel and juice, olive oil, and honey in a small bowl. Add to the mango mixture and stir well. Refrigerate until ready to use.
GRILLED HALIBUT INSTRUCTIONS
- Combine tamari, sherry, oil, lime peel and juice, cinnamon, and garlic in an oblong dish. Chill and marinate halibut fillets for 1 hour.
- Generously oil grill prior to preheating (unless you are using a separate hinged wire grill).
- When coals are hot, place fillets on grill; cook for 5-7 minutes or more depending on thickness, until fish easily flakes with a fork. Baste with marinade on each side.
- Transfer to a platter and spread Mango Relish on top before serving.
- Yields 6 servings.
