Halibut Cheese Chowder Recipe

INGREDIENTS

  • 2 tbs olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped carrots
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red bell pepper
  • 2 lbs fresh halibut, cut in bite-size pieces
  • 3 cups chicken broth
  • 1/2 tspn garlic salt
  • sprinkle of cayenne
  • 2 cans evaporated milk
  • 3 tbs cornstarch
  • 2 1/2 cups shredded cheese
  • croutons

INSTRUCTIONS

  • Saute in olive oil the onion, celery, carrots, green peppers, and red peppers. Add halibut and fold into vegetables. Saute 1 minute.
  • Add chicken broth, garlic salt, and cayenne. Bring to simmer for 4-5 minutes. Add canned milk mixed with cornstarch; bring to simmer until thick. Add shredded cheese. Stir over low heat until melted (watch carefully).
  • Remove from heat. Serve in large bowl; sprinkle with croutons.
