Lemon Fish Bake
INGREDIENTS
- 8 pieces of serving size Salmon or Halibut
- Salt
- 5 tablespoons butter or margarine
- 1 lemon thinly sliced
- ¼ to ½ cup sour cream
- ½ cup Cheddar cheese, shredded
- 1 tablespoon butter or margarine
- 1½ cups water
- ½ cup lemon juice
LEMON SAUCE INGREDIENTS
- 1 tablespoon corn starch
- 1 tablespoon butter or margarine
- 1½ cups water
- ½ cup lemon juice
INSTRUCTIONS
- Place fillets in a single layer in a shallow buttered baking dish. Salt each fillet lightly, then top with about 2 teaspoons of melted butter. Cover baking dish with foil. Place in 450 degree oven and bake until fish flakes easily with fork. Allow 10 minutes for each inch of thickness.
- When fish is baked, drain off part of liquid and cover with Lemon Sauce. Serve each fillet topped with a thin slice of lemon, a dollop of sour cream, and shredded cheese. Make 8 servings. Note: The trick to cooking moist fish: DO NOT OVER COOK
LEMON SAUCE INSTRUCTIONS
- Make a paste of cornstarch and butter. Bring water and lemon juice to a boil. Stir in cornstarch paste and cook until thickened. Use about 2 tablespoons sauce on each fillet.
