South of the Border Halibut Recipe
- 1 cup boiling Water
- 1/2 cup Butter
- 1 (8 oz.) package of Cream Cheese
- 2 lbs Halibut filets
- 1 can diced Green Chiles
- 1 tsp Cilantro, optional
- Salt and Pepper to taste
- 1/2 cup White Wine Vinegar
- When water comes to a boil in saucepan, reduce heat and add butter and cream cheese. Stir until blended as a white sauce. Add green chilies, cumin, and cilantro.
- Place halibut in baking dish, drizzle a little olive oil on top, & season to taste. Pour white wine vinegar over and bake 20-30 minutes at 350 degrees or until flaky. Pour excess liquid off the halibut. Add white sauce on top and serve over rice.
